Spaghetti with garlic butter sauce

 

Last night I tried a new recipe.  I love one pot dinners, butter, and garlic.   This dish had all those wonderful things!

I cooked some spaghetti for about 6 minutes.  drained it and put it into a bowl.  In the same pot, I took a half stick of butter and a jar of chopped garlic and sautéed that in the pot.  I added some Mrs Dash garlic and herbs seasonings because my husband can’t have salt.

I tossed the noodles into the sauce and then added Parmesan cheese.  It was amazing!!   It was easy!  It was low sodium!  Win for my family.

We grilled salmon to go with our pasta, but you could honestly serve it with chicken or shrimp.  It is very versatile!

Sausage Gravy

1/2 pound sausage

1 can evaporated milk mixed with 1 can of water

all purpose flour

 

Brown the sausage in a pan.  Sprinkle the flour into the browned sausage and stir around until it is incorporated.  Add enough milk and cook low until it is thickened to your liking.  You can add more if you like it thinner.

Serve over biscuits or toast

One pot curry chicken and rice

Perfect RV food!   

  • 2 chicken breasts, cut into 1 inch pieces
  • 1/2 onion, chopped
  • 2 tablespoons butter
  • 1 cup instant rice, Minute maid
  • 1 can chicken broth/or 1 can evaporated milk
  • 3 Tablespoons curry
  • honey

heat 1 tablespoon in a deep frying pan and add chopped onions, cook or saute until done.  Add chicken pieces and curry and cook until chicken is no longer pink.  Add can of liquid and 1 cup rice, cook until done.  I just brought it to a boil and then turned it off to finish.

Add honey to make it sweeter if you like.

Sweet Potato Casserole (Miss Kay’s)

Makes 10 to 12 servings  * 9X12 inch casserole dish

Casserole

  • softened butter, for the casserole
  • 3 cups mashed sweet potatoes (one 29 oz can and one 16 oz can drained), or 2 pounds fresh sweet potatoes, baked or peeled and boiled, then mashed.  I used 2 large cans
  • 1 cup sugar
  • 1 stick butter, melted
  • 2 large eggs
  • 1/2 cup evaporated milk
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
Topping
  • 1 1/2 cups packed brown sugar
  • 2/3 cup self rising flour
  • 1 1/2 sticks cold butter, cut into bits
  • 1 1/2 cups coarsely chopped pecans
  1. heat oven to 350, lightly butter the casserole
  2. make the sweet potatoes:  in a large bowl, combine the mashed sweet potatoes, sugar, butter, eggs, milk, cinnamon, and vanilla.  Spoon into the casserole dish
  3. Make the topping:  in a  large bowl, combine the brown sugar and flour.  With a pastry blender, cut in the butter and pecans.  Scatter the topping over the sweet potatoes.
  4. Bake at 350 until the topping is crisp and the potatoes are piping hot, about 1 hour.

Two Sister’s Divinity

It has become kind of a yearly tradition for me and my sister Joy to get together at Christmas and attempt to make divinity.  We usually have a failed attempt, but it always works out!  This year, we put off our candy making because of the rain, but today we finally decided to just go for it (in spite of the weather).  Well, as usual our first batch was not so good.  We followed the recipe and beat it until my kitchen was begging for mercy; and still it was not very good.  So the second batch, we decreased the water to 3/4 cups instead of 1 and beat the eggs a long time!  Our stiff peaks were high!!!  This batch was beautiful, light and glorious!!!

Here is our recipe

4 cups sugar
1 cup corn syrup
3/4 cup water

Stir on stove until sugar dissolves, heat to 255 degrees on a candy thermometer.  This is the hard ball stage.  We went about 1 degree higher just to be sure

Beat 3 egg whites until they have stiff high peaks

Once the sugar mixture is the right temperature, add it slowly to the egg whites.  Pour it slowly and just have a small steady stream.  Now beat it with your mixer until it begins to lose it’s gloss,  it will take a long time!!!   Just keep watching it.  Once it loses its gloss, fold the pecans in and 1 teaspoon of vanilla.

Now take two spoons and work quickly.  dip out some divinity and then take the other spoon and push it off the spoon onto waxed paper.

Skillet Sausage

2 pounds sausage, I used smoked beef.  Sliced
1 cup apple cider vinegar
1 cup brown sugar
1 cup sliced onions or more, I used frozen fajita style onions and peppers

Mix vinegar and brown sugar in a skillet.  add sausage and onions and heat covered over medium heat stirring occasionally for about 15 minutes or until onions are done.  Uncover and cook for another 5 minutes.  Serve over rice!

Grilled Chicken Burritos

Grilled Chicken Burritos

3 cups grilled chicken,  I used a bag of grilled ready chicken strips.
2 cans diced tomatoes with green chilies
1 can black beans, drained and rinsed
2 cups Monterrey jack cheese shredded
8 flour tortillas
1 can green enchilada sauce
1 container sour cream

Preheat oven to 350

Coarsely chop chicken, and place in a large bowl.  Stir in 1 can tomatoes with green chilies, half of black beans, and 1 cup cheese.

Spoon chicken mixture in the center of each tortilla.  Fold opposite sides of tortilla over filling, and roll up. Place seam sides down in a 13 X 9 baking dish.  Top with enchilada sauce, remamining tomatoes, black beans and cheese.

Bake at 350 for 30 to 45 minutes.  Remove from oven and let stand about 10 minutes.  Top with sour cream!
