Oven Fried Chicken Breast

Prep time: 15 Min Serves: 4

 

– 4 lg boneless skinless chicken breasts
– 2 c bread crumbs
– 1 tsp coarse kosher salt
– 1 tsp ground black pepper
1.   Preheat oven to 400* with rack in the middle shelf.
2.   Cut each chicken breast in half, and trim the extra fat off.
3.   Mix together bread crumbs, salt and pepper on a plate.
4.   Roll each chicken piece in bread crumbs, until all sides are coated.
5.   Place on a cookie sheet and bake for 30 minutes.
